I like easy meals, don’t you?Meals that I can pile everything in one pot and then come back and do a couple of things and have a mea? So I tried out BBQ Pork in my Instant Pot. It was delicious and super easy to make. I was able to put the pork loin, bbq sauce and water in the pot cook it, shred it and then serve it on buns with a couple of sides. Easy peasy. And oh so delicious.
And it is a great meal for the summertime. Especially here in Texas where it is always hot and even with air-conditioning the kitchen can get super hot. Because the Instant Pot is awesome like that and doesn’t get your kitchen hot.
How To Make This Instant Pot BBQ Recipe
- 4lbs Pork Loin (I cut it into large chunks)
- 2 Bottles Favorite BBQ Sauce (18oz bottle or 1 larger bottle)
- On the sauté setting, sauté the pork on all sides for a few minutes in just a bit of oil.
- Remove the oil if there is any left.
- Pour BBQ Sauce over the pork loin covering it.
- Add just enough water to cover the pork when you smash down.
- Cook it on Manual High for 50 mins
- After it is finished cooking do a QR
- Remove the pork from the Instant Pot and put the sauce that is left on sauté for about ten minutes.
- While the sauce is sautéing use two forks to shred the pork in a bowl. You can also use a hand mixer to make it faster.
- When that is done place the pork back int he sauce and it is ready to enjoy on a hamburger bun or even something fun like Macaroni and Cheese.
I hope you all enjoy this dish and remember it makes a great take-along for a pot luck or even the main dish for a holiday BBQ when it is too hot to be outside or the weather is great for cooking on the gril!
Enjoy!
