Blueberries are one of both of my kids favorite fruits, they love to eat them as a snack alone or they love them foods such as in pancakes or even blueberry bread. And with this love of all things Blueberry, I had to learn how to make blueberry dishes on my own such as the recipe for Fresh Blueberry Bread, when I originally made it the first time, we had recently went to a Blueberry Festival and gotten freshly picked blueberries while we were there.
Get the recipe here:
- 2 eggs
- 1 cup white sugar
- 1 cup milk
- 2 teaspoons vanilla
- 3 tablespoons vegetable oil
- 3 cups all-purpose flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 cup fresh blueberries
- Mix together beaten eggs with the sugar. Add milk, vanilla and melted shortening or vegetable oil.
- Sift together flour, salt, cinnamon and baking powder. Combine mixtures, stirring only until blended. Carefully fold in fresh blueberries.
- Pour into greased 5 X 9 inch loaf pan. Bake at 350 degrees F for 60 minutes. Cool in pan but try to remove from pan before completely cool.
